Coconut Curry Cake

This is a small, rich, dense cake. The pans I used are 6 in.

1 3/4 cup of flour (Fair Trade made with Quinoa)
1 1/2 tsp baking powder
1 1/2 sticks of butter
1 cup Coconut Sugar (Fair Trade available online)
1/2 tsp salt (Fair trade Himalayan)
2 eggs (fresh local eggs)
3/4 cups Coconut Milk
1 Tbs Curry powder

preheat oven to 350. Mix the first 6 ingredients and the curry powder together. Add the eggs and coconut milk and mix until blended. Spoon into the greased cake pans. Bake for 30-35 minutes or until done.

Spicy chocolate frosting
1 1/2sticks of butter, softened
12 oz of powdered sugar (Fair Trade, Wholesome Sweeteners from Raley's)
1/2 cups of cocoa powder (Fair Trade Dagoba from Rainbow Grocery)
Cayenne Pepper to taste
Coconut milk (enough to give it frosting consistency)
