Mascarpone Brownies

Delicious and rich brownies made with fair trade ingredients and homemade Mascarpone cheese. 

1 cup butter
3 oz. dark chocolate (fair trade, Guittard Akoma, Andronico's)
1 cup sugar (fair trade, Wholesome Sweetners, Raley's)
1/2 cup cocoa (fair trade, Dagoba, Rainbow Grocery)
1/2 cup mascarpone (homemade with raw milk)
3 eggs (local, very fresh)
2 tsp vanilla extract fair trade, Singing Dog, online)
1/2 cup sifted flour (Gluten free)
pinch of salt (fair trade, Aloha Bay, Andronico's)

Preheat oven to 325F. Butter 8-in square pan.

Melt butter. Add chopped chocolate and allow to stand for a minute, then stir to combine. Stir in cocoa, sugar and salt until just mixed.

In a separate bowl beat mascarpone, eggs and vanilla by hand. Add melted butter and chocolate mixture and mix to combine.

Fold in the flour. Don't overmix. Pour the batter into the pan and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
